Kujata = Minotaur (specifically) + Titan
Surabhi = Minotaur (specifically) + Dragon

Update 0.736 added two new hybrids.
Akabeko = Bovaur (Ayrshire) + Foxen
Lamassu = Bovaur (Ayrshire) + Seraphim

Unicorn = Bovaur (Mare) + Sylvan (Elf)

Note: Honestly it's a massive pain to update the charts so ^these above are largely the only updates I'll continue until maybe 1.0 hits.

Nephelym have a 40% chance to give birth to a Hybrid when choosing the right pairs (they also receive the Hybrid Trait).

You need to buy the Mut Hut from Cassie before you can get Hybrids, otherwise the offspring will always be a regular Nephelym.

There is a total of 19 hybrid combos. Demons have 7 hybrids, Dragon 6, Foxen 5, Bovaur 4, Neko 3, Seraphim 3, Titan 3, Harpy 2, Mintotar 2, Vulwarg 2, Elf 1

Cheats

Putting this here just so I can quick access it in game. Source is the Discord FAQ

In order to use these cheats, you must load a save, pause the game, and put them into the cheats bar on the settings menu.
With the newest update the UI has been changed. Cheats now must be put into the console. ~ is the default key but it can be changed. Pasting no longer works so you must type it into the console.

There is a ? icon on the left of the bar. Clicking that shows all available commands /cheats.

You must type them exactly as is

add money - Gives you 1,000,000 Orgasium.
add favor - Gives you 1,000 Goddess' Favor.
infinite lust - Your lust meter will not decrease, but if it is already at 0 then you need to sleep.
infinite spirit - Your spirit form meter will not decrease.
win wild sex - Your climax meter will not raise during wild sex, but will not work for spontaneous blowjobs.
reset wild sex - Turns off win wild sex and allows for lust to decrease.
enable spirit form - Unlock your spirit form without completing the small quest.
all barns - Unlocks all barns on the ranch.
all sex positions - Unlocks all sex positions
max all fluids - Gives you maxed fluids of all kinds.
go home - Teleports you to the house.
imma lazy sack - Skips all progression gates and unlocks all portals.
always reproduce - Sets pregnancy chance to 100%.
reset reproduce - Turns off always reproduce and sets pregnancy chance back to normal.
essence 1 - Sets world level to 1.
essence 2 - Sets world level to 2.
essence 3 - Sets world level to 3.
essence 4 - Sets world level to 4.
essence 5 - Sets world level to 5.

Some Hybrids do, others don't! For example, the "Kujata", "Surabhi" and "Unicorn" have their own Exotic forms, as well as Humanoid forms :)

As a small update on the guide, you don't need to type in the cheats in the cheats bar. You can simply click on them after you click the question mark '?' in the bottom left, and it will toggle them on and off.
[Note: Some cheats, like "imma lazy sack", are permanent and cannot be turned off after activating it.]

I don't think it uses World Level anymore, just Essence of individual species varieties. I think raising those makes it possible, though still rare, to find higher level statted wild Nephelym.

What does setting the world level do? Does it increase the odds of raising the default rarity & equipped skills of wild ones you capture in the wild?

I didn't do a lot of experimentation to find all of the possibilities, but if I remember correctly, I managed to get the following Demon Hybrids with the following variants: Daeva - Succubus, Hellhound - Incubus or Cambion, Jabberwock - Succubus, Kumiho - was definitely a Succubus. I think Kusarikku was Cambion and Oni was Incubus, but I don't remember what I bred to get a Bakeneko at all... It has been a while now...
Hopefully this information can help until someone who knows more can answer.

@sgtobliterator The Nurturing trait gives a 30% change to increase the a trait level of the offspring but it might be limited to the world level.
