This tutorial will describe how Overlay Studio (or any app) can be removed from being picked up by Nvidia shadowplay. Unfortunately, as a developer, there is currently no way to tell Shadowplay to exclude an application. The only option that seems to work is filing a ticket with the shadowplay developers (but you better be ready for no response). So... while we're waiting for Nvidia to officially add Overlay Studio to the exclusion list, let's fix the problem ourselves.

First, you will need to download[github.com] Nvidia profile inspector. Make sure you download the latest version from the 'releases' page. Once you've unzipped the download, and opened the profile inspector application, you will be presented with the following screen.

Our goal is to add the Overlay Studio executables to a profile that is ignored by shadowplay. After trying a few different profiles, I found that adding the executables to the 'discord' profile seems to work.

Change the profile to discord, and click the 'add application to current profile' button to select the executables. Navigate to the Overlay Studio steam directory (Located at <Your steam directory>\steamapps\common\OverlayStudio\bin) and add both OvelrayStudioService.exe and OverlayStudio.exe. Once you've done this, you should see the application names in the list.

At this point, Overlay Studio should now be ignored by Shadowplay. If you're somehow still having issues, feel free to let me know on discord (or just comment in this guide).
