Fish I have found so far.
These 33 out of 35 are all the fish I have found so far. I got tired of there not being a guide showing all the fish, so here is one in progress. While the written guide will have all 35, I have yet to capture the last two to put the images here. There will also be a video provided at the bottom.

Fishing Basics
Just a quick tip, basic fishing rod can only do so much. Get the lonely fishing rod from the Horns of the South area by the Ancient Cromlech teleport.

You can tell which fish you are getting via five markers:
1: The first being the bobber size in which they can be large, medium, or small.
2: The second being the bobber speed, in which how fast it goes up and down the channel.
3: The third being the behavior of the bobber in which it stays up or down or moves up and down repeatedly.
4: The fourth being the catch rate or the bubbles on the left. Some of the more rare fish take longer when trying to capture them compared to the usual suspects.
5: The fifth could just be paranoia after staring at these for hours, but the stamina bar or the Durability seems to drain faster for the rarer fish when not within the bobber.

While this guide won't cover these markers and the related fish, it is something to keep in mind when seeking these fish out during your game.

So starting with each area, I will list the location and time period in which I first saw these fish appear. Obviously some fish can be caught at different locations or time, but I only care about finding them once.

Two Honorable mentions are

Quest Island for Cheese Spell which has the Really Special Herring regardless of time. Plus Big Coin Purses (25 coins), and trash like vase, mugs, etc.
Castaway Cave by the All-Mother Temple has trash such as Cups, Water Pitchers, Amphora, Horseshoes, and Wooden Dolls.

This video is an excellent guide by Bing! Game Guides, in which he showcases not only where he got the fish, but also the bobber's and other markers to help you find the fish faster. Definitely a great video and should be used when trying to secure some specific fish.

Amazing guide , helped a ton ! :broflex: Just wanted to add another possible location for "Tunny" as I've had no luck finding it on Dead-Fisherman's Rock:after countless of attempts. Instead found tunny in Forlorn sword , close to "Beach" teleport . After teleporting , go south , pass broken wooden bridge , go a little bit more south , there should be some kind of a beach facing small island/ / rock formation (on that beach there is also a Titanium and Iron Ore deposits) . As previously mentioned by guides author in the comments , try fishing for tunny from 2 a.m to 7a.m . :fishing:

It took me a long time to catch the last Fourhorn, too.
I finally caught it during the day time south of the Dead Fisherman (ocean).

I'm really struggling to get my last fish, the Fourhorn. Are there any specific times people know of to hook it? I've tried Deadman's rock, Wreck of Andraste and Cuanacht.

The tunny is rather rare, I found it only in the morning time between 2 and 7am. I made a save and did resets and maybe out of 5 resets I found it once or twice.

How rare is tuna and where and when to catch it. In 20 hours of fishing I still haven't found it.

One fish near Roscree feels impossible to catch. The box is tiny (only about as long as the own marker) and moves faster than you do. Whenever it moves from the bottom to the top, I lose almost half of my durability while moving back up. I'm already using the lone rod. Any tips?
Thanks for the guide anyways! Even though it's kinda hard for me to follow, because I'm playing in German and tha names are completely different...

I was trying to find which spots share the same loot pools, that's how I figured out that everything from the Southern Peninsula travel point to under the All Mother Temple seems to use the same loot pool.
